I love spaghetti squash, it is awesome. We bought one at the farmer’s market, so today we’re having a spaghetti squash bake.
It goes like this:
- 1 decent sized spaghetti squash
- 1 lb. of ground beef or ground turkey (or whatever meat-type thing you prefer)
- 1 decent sized tomato
- 1/2 a medium onion (I used a white one today, although I generally prefer the red ones)
- 3 button mushrooms
- 1/2 a bell pepper
- garlic, basic, oregeno, pepper to your preference
You cut the squash in half and take out all the seeds and whatnot, then stick it in a pan with a half inch or so of water, then stick it in the oven at 350 degrees for about 45 minutes or so (Your time may vary, of course).
While you’re doing that, brown the meat, and cut up the veggies. Add the onion and mushroom to the meat towards the end of the cooking. You can add the bell pepper here too, but we don’t because my gents are picky about “mushy” green pepper. When the meat’s all cooked, set it aside till the squash is done.
When the squash is done, take a fork and scrape out the strings of squash (I’m assuming you already know how to do this-if not, Google is your friend. :D).
Mix the squash, meat and all veggies into a bowl (or the dish you’ll bake everything in, if you want to save dishes. ), then pour it all into a baking dish. Add 1/2 a cup of shredded cheese, then toss it into the oven (350’s fine) for 15-20 minutes. It’s awesome, it tastes amazing, and serves 6, I would say. (It serves us three, with some for hubby to take to work, and kiddo and I to have as leftovers)
